The structure of the book remains the same, but many recipes have been clarified and... commented on. All main chapters—relevant culinary classics—are preserved: first and second courses, cold appetizers, sauces, salads, baking, and desserts. Notes have been added explaining infrequently used words and some terms, along with advice on what can replace certain rare products or kitchen utensils in our time. Several inaccuracies that crept into the original text have been corrected, and a number of points that could cause misunderstanding have been clarified. We hope this edition of the book is clearer, and the recipes are more accessible for preparation.
